Spanish Recipes
Albondigas (meatballs)
Spanish albondigas are a very pleasant surprise! These tasty little balls of meat seasoned with herbs are severed in a rich sauce and are usually served with a sprinkling of potato fritas. Serves 8.
Sauce Ingredients
2 tablespoons olive oil
1 medium onion, chopped
1 medium carrot, chopped
1 medium red bell pepper, chopped
4 garlic cloves, chopped
1 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon pepper
1/8 teaspoon nutmeg
1 bay leaf
1 cup water
1/2 cup dry white wine
Preparing Sauce
1. Heat oil in large pan.
2. Add all sauce ingredients except water and wine and cook until vegetables are soft. Allow to cool.
3. Remove bayleaf.
4. Puree the sauce in blender.
Meatballs Ingredients
2 lb. lean ground beef
1 1/2 cups bread crumbs
2 tablespoons chopped fresh parsley
1 1/2 teaspoons salt
1 teaspoon dried oregano
3 eggs
Flour
2 tablespoons olive oil
Preparing Meatballs.
1. Mix the meat, breadcrumbs, parsley, eggs and season with salt and oregano.
2. Shape into balls.
3. Roll each ball in flour.
Heat oil in large pan until hot.
4. Add meatballs and cook until browned all over.
Add sauce, water and wine and bring to the boil.
5. Reduce heat and simmer for 15 minutes ensuring that the meatballs are completely cooked inside.
Serve with chips, bread or on their own.
