Champiñones al Ajillo (Mushrooms in Garlic Sauce)

Garlic is very prevalent in Spanish cooking, so it is no surprise that this typical mushroom dish is cooked in a delicious garlic sauce. Serves 6

Ingredients

5 tablespoons olive oil
5 garlic Cloves, peeled
450g (1 pound) fresh mushrooms, cleaned and cut into thick slices
1/2 dried chilli pepper, seeds removed
1 dl (1/2 cup, 4 ounces) dry sherry
Salt
2 tablespoons fresh parsley, chopped

Preparation

1. Heat oil and add garlic.
2. Cook garlic until it begins to brown, add the mushrooms.
3. Stir whilst cooking.
4. Add red pepper and dry sherry.
5. Bring to boil for one minute.
6. Garnish with chopped parsley and serve.
