Cordero Asado al Horno (Roast Marinated Lamb)

Spain is a country for 'meat lovers'. There are many dishes and preparations, however some the tastiest recipes are the oven-roasted cuts. Serves 4.

Ingredients

1.5 kg leg of lamb
3-4 garlic cloves, peeled
10ml salt
40ml parsley, chopped
10ml dried oregano
60ml olive oil
100ml brandy

Preparation

1. Grind garlic and salt.
2. Add oregano and parsley and grind to a paste.
3. Coat the lamb with paste and leave to marinade for 3 to 4 hours.
4. Preheat oven to 200c or Gas mark 6.
5. Place lamb in roasting tin and drizzle with olive oil.
6. Add the brandy to the juices 15 minutes before the lamb is ready.
7. Rest for 10 minutes before carving.
8. Serve with juices.

Allow 20 minutes per half kilo should give pink meat with an extra half an hour for well done.
