Gambas al Pil-Pil (Chilli Prawns)
This is a typical Andalucian dish combining fresh prawns, fried with garlic, spices and olive oil. Served sizzling hot with crusty fresh bread. Delicious! Serves 4.
Ingredients
1/2kg prawns
Salt
1 cup good olive oil
4 cloves garlic, chopped
1/4 teaspoon paprika
1/2 chicken stock cube
3 bay leaves
3 dried red chillies
Parsley, chopped
1 glass white wine
Preparation
1. Season the prawns with salt.
2. Heat oil in large earthenware dish.
3. Add garlic, chillies and bayleaves and stir over medium heat until garlic begins to turn light brown (do not burn)
4. Add prawns.
5. Add the paprika and stock cube and stir for approx 2 minutes until prawns are cooked.
6. Add the wine and simmer, then remove from heat.
7. Garnish with fresh parsley.
8. Serve with fresh bread
