Gazpacho (Cold Vegetable Soup)
There could not be a dish more typical Andalucian cooking. Gazpacho is a very popular and refreshing soup made fresh local ingredients and served with fresh crusty bread. Serves 4.
Ingredients
1/4 kg tomatoes
2 peppers
1 clove garlic
5 tbsps oil
2 tbsps vinegar
150g breadcrumbs
Preparation
1. Grind garlic, chopped pepper and salt in a mortar.
2. Chop tomatos into pieces and add with moistened breadcrumbs.
3. Add olive, stirring continuously until absorbed.
4. Add cold water and strain it off.
5. Add vinegar and salt and serve very cold with croutons as accompaniment.
