Tortilla (Spanish Omelette)
Tortilla is a tasty thick omelette made with potato, usually onion and sometimes with other ingredients. It is usually served as a slice 'pincho' and is very filling. Serves 4.
Ingredients
4 large eggs, beaten
Olive oil
2 large potatoes, peeled and cut into 1cm dices
1 large Spanish onion, chopped
Salt
Preparation
1. Peel the potato and onion and chop into pieces.
2. Season the potato and onion with salt.
Heat olive oil and add potato and onion and cook until potato is crisp and the onion is changing colour.
3. Drain and put to one side.
Beat the eggs and add salt.
4. Add potato and onion to egg (whilst still warm)
Heat oil in frying pan and pour in egg mixture.
5. Cook on low to medium heat until a crust forms on the bottom. (shake the pan every now and again to ensure it doesn't stick).
6. Turn over Tortilla after 5 minutes to seal the other side. (a plate over the top of the pan can help with this slightly tricky manoeuvre.
After cooking for a few more minutes transfer on to plate to serve.
